This was our lunch today! (our take on veggie pizza- ezekiel sprouted grain tortilla, tomato sauce, chopped peppers, zucchini, olives, garlic and oregano)
So, 6 months ago I was told by a doctor we found here in KC, MO that me and 2 of my girls were dealing with candida. Most people are familiar with candida as your typical yeast infection, but that is not what we were dealing with. It was showing up in other ways....causing dizziness, fatigue, forgetfulness, anxiety, and such. We were told this was systemic candida which affects the nervous system. It has been crazy to say the least. I am now looking back in my mind and discovering that I may have been dealing with this on and off for quite a few years now and never really knew what it was. All that said, we have radically changed our diet for the past 6 months. We have basically stayed away from gluten (we do eat ezekiel sprouted grain bread or tortillas about once a week), dairy, and refined sugars. The girls and I have had to take some homeopathic medicine to help, which I am still taking some.
As we are on this journey our tastes have changed and we are craving things we never craved before. For example, I can't seem to get enough baked oatmeal and coconut milk! And we love omelets now, which we used to not be huge fans. Here's to healthy food that tastes good!
